We'll go to the beach after dark with bbq tongues and just grab the big ones while theyre up fighting on shore. Leave ém in a bucket of water with nothing to eat for a day before you cook em, cleans em out

We have them here in Nevada in the Truckee river. I call them craw dads or mud bugs. They have a much smaller claw like Roosty said and are kind of redish. I get in the river with a net and a stick, I put the net behind them and then spook them with the stick and they swim right in. My kids think its fun, the more manly men just grap them but I am a huge wimp and prefer the net. I can fill a 5 gallon bucket in an hour or two.
Side story,
I worked as a doorman for a bunch of years, the bar/restraunt next door served all you could eat crawfish (it was a Louisanna themed bar) on Wed. nights. The manager agreed to let me and another doorman split the cost and go for it. The first plate had like 12 of them all nicely dispayed, they realized the display was not needed. We ended up filling one of those rectangular bar garbage cans with remnants. My boss came in and freaked, the whole lobby smelled like stinky mudbugs, new rule was passed "no eating in the lobby". It was worth it, they are pretty tasty. It's so much work to get at them I think I digest them as fast as I eat them, the kitchen closed was the only reason we stopped.
